Located in the bucolic heart of California’s Central Coast wine country just six minutes from the Paso Robles main square, Refugio boasts a fully-equipped teaching/catering kitchen and expansive patio. Students at the classes learn to create fantastic food, savor award-winning wines, and meet chefs, local winemakers and food artisans in a convivial atmosphere.  Two state-of-the-art vacation suites are on site and available to book for private parties and overnight stays.

Tools to Last a Lifetime: The Perfect Steak and The Perfect Caesar with author/Refugio owner Brigit Binns
Thursday, March 10th at 5pm in the Refugio Kitchen
In this outrageously delicious and crucially important class (back again by popular demand), learn the restaurant-insider secrets of residual-heat cooking. Quote from a past student: “I’ll never cook steak any other way again.” Plus, learn Brigit’s highly curated and mindful take on arguably the most beloved salad in the country. You WILL become the most popular person in your world. Author of 29 cookbooks (including the Palm restaurant cookbook, Williams-Sonoma’s “The Cook and the Butcher,” and “Whole Beast Butchery” co-authored by Ryan Farr, plus the upcoming Sunset title “Eating Up the West Coast”) Binns knows her meat. Special guest Riley Hubbard, Assistant Winemaker of Law Estates Wines will pair and pour several of their highly acclaimed wines.
This is a demonstration class; the fee is $110 and includes a welcome glass of Prosecco and several generous tastings of Law Estate Wines.

East Meets West: Bringing the Ancient to the Present with Jeff Perlman of Three Season Ayurveda

Ayurveda means “knowledge of life” and is the oldest known medical science on earth which is understood by the five great elements found in our universe; ether, air, fire, water & earth. All of us have a unique makeup of these elements in our bodies known as doshas; vata, pitta and kapha which determines our individual constitutions. These biological energies can become out of balance with the change of seasons, our locations and what we consume. All the foods, spices, herbs and beverages we consume are composed on 6 tastes; sweet, sour, salt, pungent, bitter & astringent and have the same energetics that are found in the universe and the doshas. Ayurveda treats disharmony with opposite actions and uses what we ingest to find individual balance in harmony. Jeff Perlman is a Certified Iyengar Yoga Instructor, Clinical Ayurvedic Specialist and Certified Massage and Marma Therapist. A professional member of the National Ayurvedic Medical Association and a Certified Cordon Blue Chef.

Please join Jeff at Dharma Yoga on Spring Street in Paso Robles at 10:30am for a special Ayur yoga cass, and then at Refugio (4pm) for an informative and fun evening weaving this ancient medical science into cooking for the 21st century.

This is a demonstration class; the fee is $110 and includes both the yoga class and cooking class. You will be welcomed to the cooking class with a glass of local wine and enjoy Jal Jerra and Organic Homemade Chai Tea during the class. Class will be limited to 15 students.

Mastering Classic Sauces: Hands-On Technique with author/Refugio owner Brigit Binns
Thursday, March 24th at 5pm in the Refugio Kitchen
In Brigit’s Williams-Sonoma book “Sauce”, she unlocked the secrets to restaurant-level saucery. In this hands-on class, ten lucky students will learn the rich and rewarding alchemy that occurs when gentle heat is applied to egg yolks and lemon juice, the simple science behind emulsions of oil and vinegar, wine and butter. In five teams of two, students will get up close and personal with concoctions that can raise a simple slab of salmon to the sublime, a perfect steak into the stratosphere, and a mound of lovingly grilled vegetables into a sumptuous repast. Once you learn the simple techniques involved, you can begin to improvise with the seasons and ingredients at hand. Students will prepare a range of simple proteins and vegetables to support their sauces.

This is a hands-on class; the fee is $125 and includes a welcome glass and several generous tastings of Paso Robles Wines.
